The 20-year-old has featured 47 times for the Rabbithos' under-20s side but he is yet to break through into the senior team.
Wigan were recommended the highly-rated versatile youngster by their contacts in Australia and he will link up with his team-mates when pre-season begins in November.
Warriors boss Shaun Wane insists the club are always keen to bring in young recruits and is hopeful that he can reach his full potential.
Wane said: "We are always on the lookout for talented players with a good attitude and a real determination to improve.
"We all believe that Gabriel is a talented forward who can really fulfil his potential here at Wigan. We can't wait to have him join us."
